После загрузки U-boot'a пишу следующее:

На сайте RAM disk подключается подгрузкой файла sam9-ramdisk.gz. Где его можно взять?

Вероятно, там-же, где и образы ядра.
А что это за файл: dataflash_at91sam9260ek.bin ? Это не он? Его, судя по названию, нужно прошить во флеш. И, видимо, указать root=/dev/mtdblock0, если это образ rootfs на JFFS.
Если это образ RAMDISK, то загрузить его из uboot перед запуском ядра.
Или самому собрать.

Ура! Линукс загрузился! Взял готовый образ файловой системы с www.heavy-online.ru/arm-linux/
А файл dataflash_at91sam9260ek.bin - это первичный загрузчик Bootstrap.
Теперича задача как IP-адрес поменять, по умолчанию выставляет 192.168.2.77

Среди параметров командной строки, передаваемых ядру есть некий параметр ip=*.*.*.*, после которого Linux стартует именно с этим адресом (судя по ifconfig). Им тоже можно устанавливать адрес (что удобно если rootfs на ramdisk, ведь изменения пропадают...)?

если не хочешь руками каждый раз то пропиши в /etc/network/ файл не помню, посмотри там увидишь в каком локальная петля настраивается
